Coooookies. Who doesn’t love a good cookie?! Especially one with oats, peanut butter, AND chocolate… ooh la la. But that’s not even the best part… these are HEALTHY (!!) I have an insaneeee sweet tooth, so I’m always looking for something to munch on without eating too much sugar & these are my new favvv. This recipe is flourless & uses no butter, a total health plus! These lil’ treats take about 15-20 min. to make & are so easy. Let’s get baking!
What you’ll need:
⅔ cup Quick Oats
1 cup Peanut Butter (organic/all natural)
½ cup Dark Chocolate Chips (estimate, add as desired)
2 Eggs
½ cup Brown Sugar
1 ½ tsp Vanilla Extract
1 tsp Baking Soda
**I like to use organic peanut butter that has anywhere between 1-3 grams of sugar per serving & dark chocolate chips. These little changes can help save a lot of calories, while still getting the same sweet taste as any cookie!
Directions:
Preheat your oven to 350 degrees Fahrenheit.
In a large mixing bowl, combine peanut butter, eggs, brown sugar, & vanilla. Stir until smooth. Then, mix in oats & baking soda. Stir until uniform throughout, then gently mix in chocolate chips.
Spread mixture along a lined baking pan, forming a rectangle.
Bake for ~10 min. *Tip: Test if done by inserting a toothpick through the center- no residue, it has baked completely.
Cool as needed.
Cut into squares, or any other shape you like.
**I prefer this method because I find it easier to cut into shapes after baking, rather than trying to form shapes with the sticky dough.
